Mini Caramel Apple Cheesecake

Ingredients

  • 4 Whole Graham Crackers
  • 8 oz Cream Cheese room temp
  • 1/4 Cup Sugar
  • 21 oz  Can Apple Pie Filling
  • 1 Egg
  • 1 Tbsp Vanilla
  • Coarse Sea Salt
  • 3 Tbsp Butter melted
  • Caramel Sauce

Instructions

  • Start by preheating the oven to 350.
  • Next, chop crackers in a food processor until they are fine crumbs. Then pour in melted butter and mix well.
  • Line cupcake pan with paper liners. If you don’t have liners, you can lightly grease the pan with butter. They are just much easier to pop out with the liners.
  • Now divide the crumb mixture evenly between the liners and press down so that it is packed in. The back of a spoon or shot glass works well to press down.
  • In a clean (I normally just wipe it out after making crumb mix) food processor mix cream cheese, sugar, and vanilla until well mixed.
  • Add egg to the mixture and mix well but do not overbeat as it will be too airy.
  • Chop a few slices of the pie filling into small chunks. Then add those chunks on top of the crusts.
  • Then spoon a small amount of caramel over the apples in the pan.
  • Divide the cheesecake mixture over the apples and caramel that is in the crusts in the pan. Lightly tap on the table to work the mix down over the apples.
  • Place in preheated oven and bake for 30 minutes or until done. 
  • Remove pan from the oven and allow to cool.
  • Top with apple pie mixture and drizzle again with caramel. Then sprinkle a touch of salt over each one.
