Mix all the ingredients for the crust together.
Press the crust mixture into the bottom of a deep 7 inch cheesecake pan.
To make the cheesecake add the gelatin in hot water and mix until dissolved.
In large mixing bowl mix the heavy cream add the dissolved gelatin. Beat the mixture until stiff peaks form.
Add the remaining ingredients for the cheesecake filling and mix again. Mix well but don't over mix.
Pour the mixture and spread evenly over the crust.
Next you want to mix all the ingredients for the ganache.
Pour ganache over the cheesecake and then place in the fridge to chill.
Before serving whisk ingredients for dalgone with a mixer at high speed.
Decorate the top of the finished cheesecake with the dalgone mixture.
You can also top with a few whole coffee beans if you would like.
