Crush your graham crackers using a food processor.
Add in melted butter and mix until fully combined.
Add a large spoon full of crumb mixture to each of your cupcake liners.
Using the back of the spoon, press down firmly to pack the crumbs into each cup.
Mix together the room temperature cream cheese, vanilla, and sweetener. Make sure it is mixed well.
Now fold in the Cool Whip into the cream cheese mixture. Then spoon even amounts into each up.
Pop them in the fridge for about 20 minutes to allow them to chill. When they have firmed up, you can top them with a topping of choice.
