No Bake Blueberry Cheesecake In A Glass

Ingredients

Crust:

  • 4 Tbsp Butter melted
  • 4 Sheets Graham Crackers or other sweet cracker/cookie

First Cheesecake Layer:

  • 8 oz Cream Cheese room temp
  • 1 Cup Whipping Cream
  • 1/2 Cup Brown Sugar or white sugar
  • 1 Tbsp Vanilla

Blueberry Cheesecake Layer:

  • 8 oz Cream Cheese room temp
  • 1 Cup Blueberries washed
  • 4 Tbsp Brown Sugar or white sugar
  • 1 Tbsp Butter room temp
  • Juice From 1/2 A Lime

Instructions

  • Start by crushing the crackers into crumbs. Then mix in the melted butter until it is well mixed. Divide the crumb mixture evenly between 4 glasses or dishes.
  • Next, in a blender or food processer, mix all ingredients for the first layer together until they are thick and smooth. Then divide it evenly over the four glass of the crumb mixture.
  • Now to make the blueberry layer, start by blending all the second layer ingredients together until they are smooth and fully blended.
  • Then divide the blueberry mixture evenly between the four glasses to make ar third layer in the glass. Cover the glasses and place in the fridge for at least one hour. 
  • When you are ready to serve, top with whipped topping and fresh blueberries and even add a cookie if you like.
