M&M Chocolate Chip Cheesecake Bars

Cookie Base

  • 2 1/12 Cups Unbleached Flour
  • 2 Eggs
  • 2 Sticks Butter softened
  • 1 Tsp Vanilla
  • 3/4 Cup Brown Sugar
  • 3/4 Cup Sugar
  • 1 Tsp Baking Soda
  • 1 Tsp Salt
  • 12 oz Simi Sweet Chocolate Chips
  • 1 Cup M&Ms
  • 1/2 Cup Peanut Butter Chips

Cream Cheese Filling

  • 1/2 Tsp Vanilla
  • 1/2 Cup Sugar
  • 8 oz Cream Cheese softened
  • 1 Egg


  • Preheat Oven to 350 Degrees.
  • Mix the ingredients for the cookie base starting with the butter, eggs, and vanilla. Mix well, then add the dry ingredients flour, brown sugar, salt, sugar, and baking soda. Mix well.
  • Fold in the chocolate chips.
  • Line your 9-inch square baking dish with parchment paper. 
  • Press just over half of the cookie dough into the lined pan lined.
  • In a medium-sized mixing bowl (or mixer), beat cream cheese well. Then add in the sugar and beat until fully combined.
  • Add in the vanilla and egg and beat until smooth.
  • Pour the cheesecake mixture over the top of the cookie dough base.
  • Crumble the rest of the cookie dough over the top the cheesecake.
  • Sprinkle on peanut butter chips, Chocolate Chips, and M&Ms.
  • Bake for 30 to 35 minutes.
  • Remove from oven and let cool completely on the counter. Then store in an airtight container in the fridge.
