Ingredients

Crust:

  • 7 oz Chocolate Chip Cookies
  • 5 Tbsp Butter melted

Cheesecake:

  • 8 oz Cream Cheese
  • 1/2 Cup Granulated Sugar
  • 3/4 Cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Peppermint Extract
  • 1 Cup Heavy Whipping Cream
  • Green Gel Food Coloring optional
  • 1/2 Cup Mini Chocolate Chips or small chunks of chocolate

Instructions

  • Grind cookies, combine with melted butter, mix well.
  • Cover the 7 inch form with foil or parchment, Pour out the crumbs, form a base with sides. Send to the freezer while the filling is being prepared.
  • In a bowl, beat cream cheese, add sugar, powder sugar, vanilla and mint extract, mix and set aside.
  • Whip the heavy cream separately and fold it into the cream cheese mixture.
  • Add more mint extract if you want more mint flavor. Color the cheesecake filling with green food coloring in the desired color (optional).
  • Add the filling to the crust and smooth the top. Sprinkle with chocolate chips on top. Send to the refrigerator for 8-10 hours, or overnight.
