M&M Chocolate Chip Cheesecake Bars
Know what I love most about the M&M’s added to these chocolate chip cheesecake bars? They could be changed out to use any color M&M’s to fit whatever party you are having. Or they could also be left out totally if you just want simple cheesecake bars.
This recipe is made from scratch for both the cheesecake mixture and the bar/cookie mixture. Yes, you could use boxed options for these, but I think you get way more flavor when made from scratch.
You will need a 9-inch square baking dish to bake your bars in. I have found that glass, stoneware or ceramic work the best for baking things like this.
How To Make Cheesecake Bars:
First, you need to preheat the oven to 350 degrees. When baking it is vital you start with a preheated oven.
Then mix the ingredients for the cookie base starting with the butter, eggs, and vanilla. Mix well, then add the dry ingredients flour, brown sugar, salt, sugar, and baking soda. Mix well.
Fold in the chocolate chips. You don’t want to do these in the mixer because it will chop them up and we want them to be whole so we fold them in.
Line your 9-inch square baking dish with parchment paper. Then press just over half of the cookie dough into the lined pan lined. You want to press down firmly so that you create an even base.
In a medium-sized mixing bowl (or mixer), beat cream cheese well. Then add in the sugar and beat until fully combined. Now add in the vanilla and egg and beat again until smooth.
Carefully pour the cheesecake mixture over the cookie dough base in the pan. Crumble the remaining cookie dough mixture over the top of the cheesecake mixture.
Finish by sprinkling on peanut butter chips, chocolate chips, and M&Ms.
Bake for 30 to 35 minutes. When finished, the cookie mixture should be lightly golden brown and the M&M’s slightly melted.
Remove from oven and place on the counter until they cool completely. Store in an airtight container in the fridge until ready to serve.

- 3/4 Cup Brown Sugar
- 3/4 Cup Sugar
- 1 Tsp Baking Soda
- 1 Tsp Salt
- 12 oz Simi Sweet Chocolate Chips
- 1 Cup M&Ms
- 1/2 Cup Peanut Butter Chips
Cream Cheese Filling
- 1/2 Tsp Vanilla
- 1/2 Cup Sugar
- 8 oz Cream Cheese softened
- 1 Egg
Instructions
- Preheat Oven to 350 Degrees.

- Fold in the chocolate chips.
