Super Easy Cheesecake Ice Cream Cookie Sandwich

When it is hot outside you don’t want to heat up the kitchen to make treats. Plus sometimes you just want to have things be easy. This super easy cheesecake ice cream cookie sandwich is sure to be a hit with everyone!

These can be made as a cheesecake ice cream cookie sandwich or any ice cream flavor of choice. You can also change up the cookies if you want.

We used store-bought M&M cookies but you could also use pecan Sandies, oatmeal raisin, peanut butter, and shortbread just to name a few options. You could also use your favorite cookie recipe if you want.

These are great for any time treat or for a special occasion. It really is one of those desserts that works for everything and takes your treats to the next level.

Makes: 8 Cookie Sandwich

Ingredients:

  • 48 oz Cheesecake Ice Cream (or flavor of choice)
  • 16 Pre-made Cookies (used MnM’s cookies)
  • Coconut Flakes (optional)
  • Mini Chocolate Chips (optional)
  • Sprinkles (optional)
  • Sliced Almonds (optional)
  • Walnuts Chopped (optional)

How To Make Ice Cream Sandwich AKA Cookie Sandwich:

Turn a cookie with the topside down. Put a scoop of ice cream on the cookie.

Then put another cookie on top of the ice cream with the right-side-up. Give it a slight press to the cookie seats into the ice cream a little.

Use an icing spatula, knife, or the back of a spoon to smooth out any ice cream on the sides of the sandwich.

Roll the sides of the ice cream into the topping of your choice. If it is not sticking, press the topping onto the ice cream with your hand.

After you are finished putting together your ice cream sandwich we need to pop them in the freezer for 10 to 20 minutes. Place them on a cookie sheet with a silicone mat.

Helpful Tips For Making Cheesecake Ice Cream Cookie Sandwich:

Before you get started pop the cookies in the freezer for 10 minutes or so.  This helps to keep the ice cream from melting quickly.

While you are making the sandwiches if the ice cream starts to melt too much put everything including the semi-completed sandwiches back in the freezer and allow them to firm up.

Mix it up! Make some with different cookies. We noted some other great cookies above but will include them here as well.

You can use pecan Sandies, oatmeal raisin, peanut butter, chewy chocolate chip cookies, and shortbread just to name a few options. You could even use whoopie pies if you wanted.

Change up the toppings too! Some other great options other than the ones we used would be butterscotch chips, cereal (thinking cocoa pebbles or fruity pebbles) crushed Oreo cookies, mini marshmallows, graham cracker pieces, and Reeses Pieces.

If not eating right away, these should be wrapped individually in something like plastic wrap or parchment paper. Then stored in an airtight container.
