If you love that creamy citrusy taste of creamsicle but also love cheesecake, I have the most amazing treat for you to try. It is a creamsicle cheesecake icebox cake.

Not only is this a super flavorful treat, but it is also super easy to make as well. I mean really it is just whipping a few ingredients together and then layering them in a dish. Then simply pop it in the fridge to chill/set.

Can it be made ahead and then frozen?
Yes! This freezes really well. You will need to store it in an airtight container in the freezer. My only suggestion would be to slice it first. That way you can thaw a slice at a time as needed.

To thaw, simply place it on the counter for about 15 to 20 minutes before you want to eat. May take less time if the room is super warm.

Could I use this same recipe for other flavors?
Yes! Simply swap out the extra and soda for the flavors of choice.

How To Make This Creamsicle Cheesecake Icebox Cake:

To start you want to mix the cream cheese, sugar, orange extract, and 1/4 cup soda in a large mixing bowl. Mix until everything is well blended.

Next, add in the whipped topping and mix well but not so much you beat all the air out.

Lay three graham crackers in the bottom of an 8″x6″x2″ dish.

Then using a basting or pastry brush coat the crackers with soda. You want to give them a generous coating.

Now add a layer of the creamsicle cheesecake mixture on top of the moist crackers and spread it out. Just make sure you only use about 1/3 of the mix as we have two more layers to do.

Add another layer of crackers, coat again with soda. Then another layer of cheesecake mixture.

Then repeat with one more layer.

Cover and place in the fridge for 3 or more hours to allow it to chill and set.

  • 8 oz Cream Cheese room temp/softened
  • 8 oz Whipped Topping
  • 1/2 Cup Powdered Sugar

  • 1 Tsp Orange Extract
