No Bake Single Serve Cheesecake With Cherry Topping
Single serve cheesecake is great when you have guests as you don’t have to worry about slicing and keeping the slices about the same size.
Plus when you use the reusable cupcake liners, it is like they have their own dish too!
I chose to use cherry topping for these, but you could easily replace it with your topping of choice.
You could either use fresh fruit to top it. Or you could use pie filling as I did.
It is such a simple way to add flavor and topping without any extra work.

How To Make No Bake Single Serve Cheesecake:
Crush your graham crackers up either by hand or using a food processor as I did. When crushed add in melted butter and mix until fully combined.
Add a large spoon full to each of your cupcake liners. Try to divide it up evenly so you have about the same thickness for the crust in each cup.
Then using the back of the spoon, press down firmly to pack the crumbs into each cup.
Mix together the room temperature cream cheese, vanilla, and sweetener. Make sure it is mixed well.
Then fold in the cool whip. Then spoon even amounts into each up.
Pop them in the fridge for about 20 minutes to allow them to chill.
When they have firmed up, you can top them with a little pie filling, fresh fruit or even cool whip.
Keep them in the fridge until you are ready to serve.

Ingredients
- 9 Whole Graham Crackers that's about 1 cup crumbs or one whole sleeve
- 8 oz Cream Cheese room temp
- 4 Tbsp Butter melted
- 1 Cup Sugar or Splenda
- 1 Cup Cool Whip
- 1 Tbsp Vanilla
Instructions
