(With No Alcohol Option)

While these cheesecake champagne truffles are made with real champagne, I know there are some out there that stay away from alcohol. So I have also included notes in the recipe to make it alcohol-free.

The candy coating on the outside of these truffles is white chocolate. I choose that so that it would make my gold sprinkles pop. However, these also work well with milk or dark chocolate too. So feel free to change it up to your liking.

You could also swap out the gold sugar sprinkles for another color or even for some fun shapes.

How To Make Cheesecake Champagne Truffles:

Start by adding the cheesecake filling mix to the mixer. Then add in the champagne (or sparkling grape juice) and mix well. It should be a sticky dough-like texter when it is all mixed.

Roll mix in hands to form ball

Next, rub your hands with some butter. Then grab a small amount of dough and roll it around in your hands until it forms a ball shape. Then place it on a silicone baking mat (on a cookie sheet). Repeat until the mixture is gone.

It should make about 12 balls.

Then dump some of the graham cracker crumbs onto a plate. Lightly roll each of the balls to coat them in the crumbs. Then place them back on the mat.

Pop the mat in the freezer and chill for 30 minutes. This helps to firm them up some so it is easier to coat them in the chocolate.

Melt the chocolate in a microwave-safe bowl in the microwave on 20-second intervals until fully melted. If you will be doing a bunch, you may want to invest in a melting pot.

Remove the balls from the freezer. Coat each one in the chocolate and place back on the mat then sprinkle with sprinkles. You need to do them one at a time because the chocolate needs to be melted for the sprinkles to stick.

Store in the fridge until ready to serve.
