Mini Caramel Apple Cheesecake
This mini caramel apple cheesecake recipe is made in a normal muffin/cupcake pan. However, it can also be made in a mini cheesecake pan as well.
When you make this recipe you should have some leftover apple pie filling and caramel sauce. So if you are wanting to double the recipe, you would not need to double those ingredients.

Ingredients Needed:
- 4 Whole Graham Crackers
- 8 oz Cream Cheese (room temp)
- 1/4 Cup Sugar
- 21 oz Can Apple Pie Filling
- 1 Egg
- 1 Tbsp Vanilla
- Coarse Sea Salt
- 3 Tbsp Butter (melted)
- Caramel Sauce
How To Make These Mini Cheesecakes:
Start by preheating the oven to 350.
Next, chop crackers in a food processor until they are fine crumbs. Then pour in melted butter and mix well.
Line cupcake pan with paper liners. If you don’t have liners, you can lightly grease the pan with butter. They are just much easier to pop out with the liners.
Now divide the crumb mixture evenly between the liners and press down so that it is packed in. The back of a spoon or shot glass works well to press down.
In a clean (I normally just wipe it out after making crumb mix) food processor mix cream cheese, sugar, and vanilla until well mixed.
Add egg to the mixture and mix well but do not overbeat as it will be too airy.
Chop a few slices of the pie filling into small chunks. Then add those chunks on top of the crusts.
Then spoon a small amount of caramel over the apples in the pan.
Divide the cheesecake mixture over the apples and caramel that is in the crusts in the pan. Lightly tap on the table to work the mix down over the apples.
Place in preheated oven and bake for 30 minutes or until done.
Remove pan from the oven and allow to cool.
Top with apple pie mixture and drizzle again with caramel. Then sprinkle a touch of salt over each one.
Storing & Freezing:
If not serving right away these are best stored in the fridge and not topped until serving.
These can also be pre-made and frozen just like you can freeze cheesecake. Simply place them in an air-tight container after they cool and place them in the freezer.
Then allow them to set on the counter 30 minutes before topping and serving. Again, these are best frozen without the topping on them.
