Serving & Storing:
While this treat can be eaten cold or warm, I find it tastes best at room temp or slightly warmed. It just makes them extra rich, creamy, and gooey.
After they have cooled from the oven you should store them in an airtight container in the refrigerated. These will be a little sticky so it is best if you do not stack them when you store them.
You can also freeze these to store them for a longer time. Then simply place them on the counter 30 minutes to an hour before serving to allow it to thaw before eating.
How To Make These S’mores Cheesecake Bars:
Start by preheating the oven to 350 degrees.
Then before you melt the butter for the recipe, use it to grease the 8×8 baking dish. Be sure to grease it heavily.
Next, you need to crush the graham crackers into crumbs (if not using already made crumbs) I find the fastest way is to toss them into a food processer.
After you have them chopped into crumbs pour in the melted butter and mix well.
Dump crumb mixture into the greased pan and pack them onto the bottom of the pan. You want to make sure it is packed well. Set it aside while you make the cheesecake.
To make the cheesecake mixture I normally just do it in the food processer as it is already dirty from the crust. But you do also use a mixer.
Add the cream cheese and beat until smooth.
Now add the vanilla, egg, sour cream, sugar, and cocoa powder. Mix until fully blended.
Pour cheesecake mixture over graham cracker crust and smooth it as evenly as you can get it.
Sprinkle the chocolate chips over the cheesecake mixture.
Place in the center of the preheated oven and bake for 20 minutes.
After 20 minutes of baking, add the marshmallows to the top and bake for another 10 minutes.
After 10 minutes if you want your marshmallows to be a little more golden on top, you can turn the oven on hi broil for just a few seconds. Just be sure you really watch it as it will burn fast.

- 1 Stick Butter
- 1.5 Packs Graham Crackers works out to be 213 grams if using crumbs
- 8 oz Cream Cheese room temp
- 1 Large Egg
- 1 Tbsp Vanilla
- 1/4 Cup Cocoa Powder
- 1/2 Cup Sugar or Splenda
- 1/4 Cup Sour Cream
- 2/3 Cup Semi-Sweet Chocolate Chips
- 5 oz Mini Marshmallows
