Copycat Recipe Ingredients Needed:
- 3/4 Cup White Chocolate Chips
- 2/3 Cup Freeze Dried Raspberries
- 1/4 Tsp Salt
- 1/2 Cup Butter, softened
- 2 oz Cream Cheese, softened or room temperature
- 1/2 Cup Sugar, granulated
- 1/2 Cup Brown Sugar, packed
- 1 Cup All-Purpose Flour
- 1/4 Tsp Baking Powder
- 1 Large Egg
- 1 Tsp Vanilla Extract
How To Make Copycat Raspberry Cheesecake Cookies Subway Recipe
Preheat the oven to 350°F
Next line the cookie sheet with parchment paper or use a silicone baking mat.
In a large mixing bowl mix baking powder, salt, and flour together. You can mix with a fork or a whisk. When fully mixed, set aside.
In a stand mixer with the paddle attachment add white sugar, brown sugar, butter, and cream cheese. Beat on low to medium speed until fully combined and creamy. If you do not have a stand mixer you can also use a mixing bowl and an electric hand mixer.
Next, add vanilla, and egg and mix well.
Gradually add the dry ingredients flour mixture and mix on low until the dough is smooth and well mixed.
Add the raspberries and white chocolate chips and stir on low speed until they are evenly mixed in the cookie dough.
Spoon dough into about 1 1/4 inch cookie dough balls. You can just use a spoon or a large cookie scoop.
Place the balls of cookie dough onto the prepared baking sheets. Then flatten each ball with the back of a large spoon or your fingers to create a somewhat smooth flattened cookie.
Place the cookie sheet in the preheated 350°F oven for about 12-14 minutes. When done the edges of the cookies will be golden brown.
