While this Keto no bake cheesecake recipe can be made in bowls or dishes, we made it in jars. That way we can put a top on it and store it in the fridge easily for when you have that cheesecake craving.
So that means you will not need a cheesecake pan also known as a springform pan to make this cheesecake.
This is just a plain cheesecake flavor. But feel free to add your own toppings, just be sure to stick with toppings that are low carb.

Simple Ingredients Needed For Keto No Bake Cheesecake Recipe:
- ½ Cup Heavy Whipping Cream
- 16 ounces Full Fat Cream Cheese
- ⅓ Cup Powdered Erythritol (or low carb sweetener of choice)
- 1 Tsp Vanilla Extract
- 1 Tbsp Lemon Juice
- ⅔ Cup Chopped Pecans
- 1 Cup Almond Flour
- 4 Tsp Powdered Erythritol (or low carb favorite sweetener of choice)
- 2 Tbsp Melted Butter
How To Make This No-bake Cheesecake Recipe:
Add the flour, erythritol, and pecans to a food processor. Pulse the mixture until it is fully mixed and the pecans are finely ground into what looks like flour.
Next pour in the melted butter and mix until fully blended.
Split the crust mixture between six mason jars. Then pack the mixture into the bottom of the jars. This makes up what would be the graham crackers crust layer of the cheesecake.
In a large mixing bowl with an electric mixer or stand mixer beat the heavy cream until stiff peaks form. It should look like thick whipped cream. When done place in the fridge.
In another mixing bowl beat vanilla, salt, sweetener, and cream cheese until smooth. Mix until completely combined.
Slowly fold the cheesecake mixture into the whipped cream mixture.
When it is fully mixed, you want to divide the no bake cheesecake filling mixture evenly between the six jars on top of the crust. You can just spoon it in, however, I find it easier to use a piping bag to fill the jars.
When done place it in the fridge to firm up the cheesecake. While can be eaten right after mixing, it has the best firmness when you refrigerate overnight.

If you change the sugar-free sweeteners or add toppings to it, remember the carb count will change slightly. If you want a lower carb count and don’t mind a smaller serving, you can always make this recipe for 8 servings. That would work out to be 6 net carbs per serving.
How Do You Store This No Bake Recipe?
This cheesecake jar can be stored in the refrigerator with a top on it for up to four days.
You can also place it in a freezer-safe airtight container and freeze it for long time storage. Then simply allow thawing before serving.
To thaw you can either move it to the fridge the day before you wish to eat it. Or place it on the counter for about 30 minutes before you need it. Thawing time on the counter will vary slightly depending on the temperature in the room.
You just want to be sure not to allow it to come to room temperature when thawing.
