Key Lime Cheesecake Bites
Sometimes you just want an easy to make cheesecake snack. These Key Lime cheesecake bites are not only super easy to make, but they are also pretty darn tasty too.

Another great thing about this Key Lime cheesecake bites, is they are also Keto friendly. You can whip up a batch in just a few minutes and then be able to pop a treat throughout the day.
This recipe can be doubled or tripled pretty easy. So it is handy to have on hand if you will be having friends and family over and need a popable treat.
For these cheesecake bites, you don’t need any pans. The only things you will need other than the ingredients is a mixing bowl, mixer (or you could mix by hand) and a zester.

How To Make Key Lime Cheesecake Bites:
In a medium bowl, add sour cream, cream cheese, and butter. Mix until fully blended.
Next, add in the lime juice and zest and mix again.
Now fold in sugar and flour until mixture forms a dough like consistency. Then place in the freezer for about ten minutes.
Remove the dough from the freezer and roll dough into small balls. You want them to be about one inch.
Then roll each ball in the crushed crackers/snaps. If not eating right away, store in an airtight container in the fridge. Or if you want them harder, you can also store in the freezer.

- 7 Keto Friendly Graham Crackers or Ginger Snaps, crushed can use regular if not doing Keto
- 1 Tbsp Sour Cream
- 1/2 Cup Coconut Flour
- 1 Tbsp Softened Butter
- 1/2 Cup Cream Cheese room temp
- 2 Tsp Fresh Lime Juice
- Lime Zest From One Lime
- 2 Tsp Keto Friendly Sugar Substitute or sugar if not doing Keto
Instructions
- In a medium bowl, add sour cream, cream cheese, and butter. Mix until fully blended.
- Next, add in the lime juice and zest and mix again.
- Now fold in sugar and flour until mixture forms a dough like consistency. Then place in the freezer for about ten minutes.
- Remove the dough from the freezer and roll dough into small balls. You want them to be about one inch.
- Then roll each ball in the crushed crackers/snaps
- Place in airtight container and store in the freezer if you want them to be firm or the fridge if you want them to be a little softer.
